Easy Meatballs in Sweet Cranberry Sauce


Ingredients


1 can of tomato sauce
1 can of cranberry sauce
1 clove garlic
salt
ketchup
brown sugar
ground meat
half onion
1 egg


Put ground meat in a bowl with the egg, grated half onion, salt. Mix it up well. Form meatballs and brown in a frying pan. Set aside. Now, mince garlic and brown in pan with little olive oil, then add tomato sauce, cranberry sauce, 2 tablespoons of ketchup, 1 tablespoon brown sugar, sprinkle salt to taste. Mix it all up. When sauce is hot add the meatballs to the sauce let it cook covered for 30 minutes under medium flame. It's great with spaghetti or mashed potatoes.

Pinson Challah Recipe


53oz of white flour
27oz of whole wheat flour
12 tsp yeast
3 eggs (one will be for glazing challah)
1 cup oil
1 2/3 cups sugar
4 1/2 cups of warm water
1 teaspoon of salt


Preheat the oven to 350.
First sift the flour, and put it in a large bowl with salt mix well. Then take 12 tsp yeast mixed into 2 cups of warm water (1 cup hot and 1 cup cold is perfect) then add 2/3 of sugar to the yeast and wait till it gets foamy, then add the yeast to the flour and knead, add the 2 eggs, oil, sugar and 2 cups of warm water (1 cup hot and 1 cup cold) and knead for about ten minutes. If it's still very sticky add a little more flour, then...basically let it rise. Punch the dough every 20 minutes for an hour... by this time it should be risen and ready for shaping. Shape and let the dough rise for another 20-30 minutes. Then glaze with egg and sprinkle sesame seeds or poppy seeds or both. Put in the oven until it turns golden brown..like this picture!
It's the best challah recipe ever! 





Moroccan Chicken

Ingredients 


Whole Chicken
Garlic Powder
Onion Powder
Paprika
Salt
Turmeric
Cinnamon
Olive Oil
Pitted Olives
Raisins
Onion

Take large bowl and mix approx. 1 tsp of each spice except the cinnamon and salt which just needs a sprinkle. Add  1/2 cup of olive oil and mix. It should turn into a paste. Cover the chicken in the paste. Then in a pan put a drizzle of olive oil. Lay the chicken skin down. Let it brown a little then turn it over and add 1/2 cup of olives. 1/2 cup of raisins and 1/2 sliced onion, you can add a splash of any semi dry wine. Cover and cook on low flame for about 45 minutes to an hour.

Option: fresh parsley.

PS. I tried the same recipe in the oven and it was delicious too!


Spinach Lasagna


Ingredients 

1 Package of frozen spinach
1 container of ricotta cheese
1 package of no need boil lasagna
1 jar of flavored tomato sauce 
2 cloves of fresh garlic
1 package of mozzarella cheese
1 tablespoon of olive oil

In frying pan brown two cloves of minces garlic in olive oil add the spinach and cook till it's soft. In a bowl mix the ricotta cheese and spinach. In a 9"13 pan spread tomato sauce on the bottom of the pan and add 3 lasagna sheets. Layer spinach ricotta mixture then add three more lasagna sheets, another layer of tomato sauce and another layer of spinach mixture, 3 more sheets of lasagna, the rest of the tomato sauce and sprinkle mozzarella cheese on top (you don't have to use all of it, depends how much you like)

Another option is to add mozzarella cheese in between the layers.
Bake on 350 for 50 minutes to an hour. Covered. Enjoy!
