Pinson Challah Recipe


53oz of white flour
27oz of whole wheat flour
12 tsp yeast
3 eggs (one will be for glazing challah)
1 cup oil
1 2/3 cups sugar
4 1/2 cups of warm water
1 teaspoon of salt


Preheat the oven to 350.
First sift the flour, and put it in a large bowl with salt mix well. Then take 12 tsp yeast mixed into 2 cups of warm water (1 cup hot and 1 cup cold is perfect) then add 2/3 of sugar to the yeast and wait till it gets foamy, then add the yeast to the flour and knead, add the 2 eggs, oil, sugar and 2 cups of warm water (1 cup hot and 1 cup cold) and knead for about ten minutes. If it's still very sticky add a little more flour, then...basically let it rise. Punch the dough every 20 minutes for an hour... by this time it should be risen and ready for shaping. Shape and let the dough rise for another 20-30 minutes. Then glaze with egg and sprinkle sesame seeds or poppy seeds or both. Put in the oven until it turns golden brown..like this picture!
It's the best challah recipe ever!
